Savoury cheese muffins

I finally had time to try some new muffin recipe! This time I’ve put chocolate muffins to one side and tried savoury muffins. Here it is the recipe, easy, quick and adaptable to any taste!

Ingredients  (make 10-11 standard muffins):

255g plain flour
3 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons fine white granulated sugar
85 g grated cheddar cheese
1 egg
240 ml milk
85 g flavoured or simple butter
grated cheese to garnish

Method

Grease muffins cups and preheat oven 190-200°C. In a large bowl sift together flour, baking powder, salt, and sugar. Stir in grated cheese.

Melt butter in a pan. Here I’ve used the leftover garlic butter (it contains parsley as well) from the preparation of garlic bread, but the original recipe contains standard butter. If you like, you can even use 90ml of oil instead.

In another bowl, beat egg with a fork. Stir in milk, followed by oil/melted butter.

Pour all wet ingredients into dry. Stir just until combined. Batter will be lumpy but no dry flour should be visible. Do not over-stir.

Spoon into tins. Srinkle tops with extra cheese and bake for 20-25 minutes.

Con un chucchiaio riempire gli stampini imburrati per 3/4 della loro altezza e guarnire con dell’altro formaggio grattugiato. Infornare per circa 20-25 minuti.

Variations:

Muffins with herb and cheese: Add 2-3 tablespoon of chopped fresh basil, chieves or other herbs.
