This is the classic chocolate muffins recipe that I’ve personally tasted dozens of times…Needless to say, they are my favourites!
Ingredients (makes 10-11 standard muffins)
255g plain flavour
2 teaspoons baking powder
1/2 teaspoon bicarbonate of soda
1/2 teaspoon salt
110-170 g fine withe granulated sugar
3-5 tablespoons of unsweetned cocoa powder
1 egg
240-260ml milk
90ml vegetable oil or 85g melted butter
Method
Grease muffins tins and preheat oven to a 190°-200°C. In a large bowl, sift together flour, baking powder, bicarbonate of soda, salt, sugar and cocoa powder. In another bowl beat egg with a fork. Stir in milk followed by oil (or melted butter). Pour all of wet mixture into dry. Stir just until combined and no dry flour is visible. Do not over-stir. Batter will be lumpy. Fill muffins cups three-quarters full and bake for 20-25 minutes, until tops spring back when pressed gently.
Variations: Add 85g plain chocolate chips to the dry ingredients or put in the middle of the cup a chocolate.
